Description

Creamy, cheesy, and bursting with flavor, this artichoke flatbread pizza is a quick weeknight meal thats surprisingly elegant.


Ingredients

  • 4 flatbreads
  • 1/2 cup homemade or store-bought pizza sauce
  • 2 cups (473 ml) shredded mozzarella cheese
  • 3 roma tomatoes
  • 1 can (227 g) artichoke hearts packed in water
  • 227 g (8 oz) cream cheese
  • fresh basil leaves

Instructions

  1. Preheat the broiler on low.
  2. Arrange flatbreads in a single layer on two baking sheets.
  3. Top each flatbread with 2 tablespoons sauce and 1/2 cup cheese. Divide the tomato slices evenly among the flatbreads and top each with several artichoke hearts.
  4. Drop several teaspoon-sized dollops of cream cheese on each pizza.
  5. Broil in the oven until the artichokes and tomatoes are heated through and the cheese has melted, about 5 to 7 minutes.
  6. Remove from oven, garnish with basil, and serve.

Notes

  • For easier spreading, slightly warm the cream cheese before adding it to the pizza.
  • If using frozen artichoke hearts, thaw and drain them completely before using.
  • To make this a vegetarian pizza, use a vegan pizza sauce and dairy-free cheese alternative.
