Description

These easy 2-ingredient thin mints are a delicious homemade version of the classic Girl Scout cookies, featuring chocolate wafer cookies coated in mint chocolate.


Ingredients

  • 1 package chocolate wafer cookies
  • 1 package mint chocolate chips (or one package chocolate chips and a few drops of peppermint extract)

Instructions

  1. Melt the mint chocolate chips over a double boiler or in the microwave in 30-second bursts, stirring in between, until smooth.
  2. Dip each chocolate wafer cookie into the melted chocolate, or use a spatula to paint a thin, even coating of chocolate over each cookie.
  3. Place the coated cookies on a parchment-lined baking sheet.
  4. Allow the chocolate to set completely before serving. For best results, let them sit for a few hours or overnight to allow the flavors to meld and the cookies to soften slightly.

Notes

These cookies improve with time as the flavors meld and the cookies soften slightly. Store in an airtight container at room temperature for up to a week. If using peppermint extract, be cautious with the amount as it is very strong.
