Frequently Asked Questions

Why are the zucchini boiled whole before being halved and hollowed?

The zucchini are boiled whole in water flavored with thyme, garlic, and salt for 10 minutes, then cooled before halving and scooping out the seeds. Boiling first softens the flesh evenly so the shell holds its shape as a vessel for the feta filling.

How is the feta filling seasoned in this recipe?

After scooping the seeds, each zucchini half is seasoned with a little salt and fresh pepper, then filled with 4 tbsp feta cheese and a few drops of olive oil. Fresh dill and cherry tomato are used as garnish — no additional mixing or cooking of the feta is needed.
