Description

A vibrant winter salad featuring butter lettuce, pea shoots, and watermelon radishes, topped with a refreshing tangerine dressing.


Ingredients

  • 1 head butter lettuce, washed and torn into bite-sized pieces
  • 1 small bunch of pea shoots, cut into bite-sized pieces
  • 4 tangerines, peeled and sliced
  • 2 watermelon radishes, trimmed and thinly sliced
  • 1/2 cup pomegranate seeds
  • 1/4 cup olive oil
  • Juice of 2 tangerines
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the butter lettuce, pea shoots, tangerine slices, radish slices, and pomegranate seeds. Set aside.
  2. In a small bowl, whisk together the olive oil and tangerine juice. Season with salt and pepper to taste.
  3. Pour the dressing over the salad and toss gently to combine.
