Made with olive oil and whole wheat flour, these pumpkin spice muffins are not too sweet and come with a bit of a healthy spin.

  • ½ cup sugar
  • 1/4 cup milk

  • 1 cup white flour
  • 1 cup whole wheat flour
  • 2 tsp baking powder

  1. Preheat oven to 350 degrees Fahrenheit.
  2. In a medium bowl, whisk together the pumpkin, egg, egg white, maple syrup, sugar, milk, olive oil, and vanilla extract.
  3. In a separate bowl, sift together white flour, whole wheat flour, baking powder, baking soda, and salt. Combine the wet and dry ingredients.
