Description

This White Bean Avocado Dip combines ripe avocados with lime juice, white beans, and cilantro for a creamy, protein-packed snack that’s ready in minutes.


Ingredients

  • 3 small or 2 large ripe avocados, peeled and pitted
  • 1 can (15 oz) white beans, drained but not rinsed
  • 1/4 cup freshly chopped cilantro
  • Juice of 1 lime
  • Zest of 1 lime
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon kosher salt, plus more to taste
  • 1/4 teaspoon black pepper, plus more to taste

Instructions

  1. In a mixing bowl, combine the avocados, white beans, cilantro, lime juice, lime zest, cumin, garlic powder, kosher salt, and black pepper.
  2. Using a fork, mash the ingredients together until the mixture is semi-smooth but still somewhat chunky. Adjust the seasoning with additional salt and pepper if needed.
  3. Serve immediately with tortilla chips or your choice of dippers.

Notes

This dip is best served immediately to enjoy the fresh flavors. If you need to store it, cover tightly with plastic wrap to prevent browning and refrigerate for up to 1 day. You can substitute lemon juice for lime juice if preferred. For a spicier kick, add a pinch of cayenne pepper.
