Description

These refreshing summer popsicles made with bright watermelon and a hint of lime are perfect for cooling down on a hot day.


Ingredients

  • 6 cups 1-inch watermelon cubes, seeds and rind removed
  • 1/4 cup fresh lime juice
  • 2 tablespoons honey or agave syrup

Instructions

  1. Place the watermelon cubes in a blender and puree until smooth.
  2. Add the lime juice and honey (or agave syrup) to the blender and blend again until well combined.
  3. Pour the mixture into popsicle molds, leaving a little space at the top for expansion.
  4. Insert sticks and freeze for at least 4 hours or until solid.
  5. To release the popsicles, run warm water over the outside of the molds for a few seconds.

Notes

If using ice cube trays to freeze, consider dropping a few of these watermelon ice cubes in a glass of sparkling water with cucumber or lime slices for a beautiful and refreshing summer drink. These popsicles can be stored in the freezer for up to a month. For a sweeter version, add a tablespoon of honey or agave syrup to the puree before freezing.
