Description
These refreshing summer popsicles made with bright watermelon and a hint of lime are perfect for cooling down on a hot day.

- 6 cups 1-inch watermelon cubes, seeds and rind removed
- 1/4 cup fresh lime juice
- 2 tablespoons honey or agave syrup
Instructions
- Place the watermelon cubes in a blender and puree until smooth.
- Add the lime juice and honey (or agave syrup) to the blender and blend again until well combined.
- Pour the mixture into popsicle molds, leaving a little space at the top for expansion.
- Insert sticks and freeze for at least 4 hours or until solid.
- To release the popsicles, run warm water over the outside of the molds for a few seconds.
Notes
If using ice cube trays to freeze, consider dropping a few of these watermelon ice cubes in a glass of sparkling water with cucumber or lime slices for a beautiful and refreshing summer drink. These popsicles can be stored in the freezer for up to a month. For a sweeter version, add a tablespoon of honey or agave syrup to the puree before freezing.
