- 2 bananas
- 1/4 cups (60 ml) almond butter
- 1/4 cups (60 ml) Medjool dates
- 1 teaspoon vanilla
- 3/4 cups (177 ml) rolled oats
- 2 teaspoons baking powder
Instructions
- Preheat oven to 350°F (177°C).
- Add all ingredients to a large food processor bowl and pulse until well combined.
- Remove the food processor bowl and blade.
- Divide the batter evenly among 18-20 sections of a silicone brownie-bites pan or a nonstick miniature muffin pan.
- Bake for 14 minutes at 350°F (177°C).
- Remove from oven and let cool on a wire rack.
- Serve with bananas or banana chips (optional).
Notes
- For a richer flavor, use pitted Medjool dates; their intense sweetness reduces the need for added sugar.
- If the batter is too thick, add 1-2 tablespoons of plant-based milk to achieve a smoother consistency.
- Store cooled monkey bars in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week.
