Description

Chewy, nutty, and naturally sweet, these vegan monkey bars are the perfect guilt-free treat. Easy to make and even easier to devour!


Ingredients

  • 2 bananas
  • 1/4 cups (60 ml) almond butter
  • 1/4 cups (60 ml) Medjool dates
  • 1 teaspoon vanilla
  • 3/4 cups (177 ml) rolled oats
  • 2 teaspoons baking powder

Instructions

  1. Preheat oven to 350°F (177°C).
  2. Add all ingredients to a large food processor bowl and pulse until well combined.
  3. Remove the food processor bowl and blade.
  4. Divide the batter evenly among 18-20 sections of a silicone brownie-bites pan or a nonstick miniature muffin pan.
  5. Bake for 14 minutes at 350°F (177°C).
  6. Remove from oven and let cool on a wire rack.
  7. Serve with bananas or banana chips (optional).

Notes

  • For a richer flavor, use pitted Medjool dates; their intense sweetness reduces the need for added sugar.
  • If the batter is too thick, add 1-2 tablespoons of plant-based milk to achieve a smoother consistency.
  • Store cooled monkey bars in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week.
