Description

Crispy taquitos filled with savory black beans, served with a creamy avocado dipping sauce. A fun, easy appetizer or light meal.


Ingredients

  • 4 pre-made vegan black bean burgers (4 pre-made vegan black bean burgers)
  • 8 small corn tortillas (8 small corn tortillas)
  • your choice of cooking spray (your choice of cooking spray)

Instructions

  1. For the rolled tacos:
  2. Preheat oven to 350°F (177°C). Coat the inside of an 8″x8″ or 10″x7″ baking dish with cooking spray.
  3. Thaw the burgers in the microwave according to package instructions.
  4. Tear each burger in half and shape into a small sausage.
  5. Heat a small skillet over medium heat.
  6. Place a tortilla in the skillet for a few seconds until warm, then flip and warm the other side.
  7. Loosely wrap a tortilla around a burger sausage. Secure with a toothpick.
  8. Generously spray with cooking spray and place toothpick-side down in the prepared dish. Repeat with remaining burgers and tortillas.
  9. Bake for 15 minutes.
  10. Flip the rolled tacos.
  11. Bake for an additional 15 minutes.
  12. Remove toothpicks and serve.

Notes

  • For crispier taquitos, bake them for an additional 5-10 minutes after flipping.
  • To make these gluten-free, use gluten-free corn tortillas.
  • Leftover taquitos can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the oven or air fryer.
