Crispy taquitos filled with savory black beans, served with a creamy avocado dipping sauce. A fun, easy appetizer or light meal.

- 4 pre-made vegan black bean burgers (4 pre-made vegan black bean burgers)
- 8 small corn tortillas (8 small corn tortillas)
- your choice of cooking spray (your choice of cooking spray)
Instructions
- For the rolled tacos:
- Preheat oven to 350°F (177°C). Coat the inside of an 8″x8″ or 10″x7″ baking dish with cooking spray.
- Thaw the burgers in the microwave according to package instructions.
- Tear each burger in half and shape into a small sausage.
- Heat a small skillet over medium heat.
- Place a tortilla in the skillet for a few seconds until warm, then flip and warm the other side.
- Loosely wrap a tortilla around a burger sausage. Secure with a toothpick.
- Generously spray with cooking spray and place toothpick-side down in the prepared dish. Repeat with remaining burgers and tortillas.
- Bake for 15 minutes.
- Flip the rolled tacos.
- Bake for an additional 15 minutes.
- Remove toothpicks and serve.
- For the avocado dipping sauce:
Notes
- For crispier taquitos, bake them for an additional 5-10 minutes after flipping.
- To make these gluten-free, use gluten-free corn tortillas.
- Leftover taquitos can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the oven or air fryer.
