- 2 1/4 tsp active dry yeast
- 1 tsp granulated sugar
- 1 cups (237 ml) warm water
- 2 1/2 cups (592 ml) white bread flour
- 1 1/2 tsp fine sea salt
- 3 tbsp olive oil
- 2 tsp cranberry oil
- 1 tsp vegetable oil
- 1 1/2 tbsp (22 g) garlic
- 1 handful fresh (flat leaf parsley)
- 2 tbsp (14 g) sesame seeds
- 1 egg
Instructions
- In a medium bowl, dissolve yeast and sugar in water at approximately 70°F (21°C).
- Add half the flour and mix. Cover the bowl and refrigerate overnight.
- Add the remaining flour and salt, then knead until the dough is smooth and slightly sticky, adding more flour if needed.
- Divide the dough into 8 equal pieces.
- Shape the dough into round buns.
- Arrange the buns in an oiled, oven-proof container.
- Cover and let rise in a warm place until doubled in size.
- Preheat oven to 425°F (218°C).
- Mince garlic with oil, salt, sesame seeds, and parsley.
- Brush the risen buns with beaten egg.
- Bake for 20-25 minutes, basting with garlic oil.
- Serve immediately.
Notes
- For a richer flavor, use a mixture of olive oil and melted butter for brushing the rolls.
- If you don’t have cranberry oil, substitute with an extra tablespoon of olive oil.
- To prevent sticking, lightly flour your work surface when shaping the rolls.
