Description

These elegant crostini are perfect for a summer get-together or a light lunch. Creamy whipped feta and juicy roasted tomatoes make a winning combination.


Ingredients

  • 8 oz (227 g) Feta Cheese
  • 3.5 oz (100 g) Cream Cheese
  • 1/2 tsp Black pepper powder
  • 7 oz (200 g) Roasted Tomato
  • 2 tbsp Extra Virgin Olive Oil
  • 10-12 Bread slices
  • 2 tbsp Butter

Instructions

  1. Add feta cheese and cream cheese to a food processor.
  2. Pulse until the cheese is well mixed and creamy.
  3. Add black pepper and mix well.
  4. Slather bread slices with butter and toast until slightly crisp.
  5. Top with whipped feta cheese and roasted tomatoes.
  6. Drizzle with extra virgin olive oil.
  7. Serve immediately.

Notes

  • For a smoother whipped feta, let the feta and cream cheese soften to room temperature before processing.
  • Toasted baguette slices work exceptionally well; aim for a thin slice for optimal texture.
  • Store leftover whipped feta in an airtight container in the refrigerator for up to 3 days; re-whip before serving.
