- 3 egg yolks
- 1/2 cup sugar
- 4 tbs mascarpone cheese
- 24 lady fingers
- 2 tbs cocoa powder
- 1 cups (237 ml) strong espresso
- 1/2 cup bitter-sweet chocolate shavings
Instructions
- Beat the egg yolks and sugar with an electric mixer or whisk until thick and pale (about 5 minutes).
- Add mascarpone cheese and beat until smooth.
- Add 1 tablespoon of cocoa powder and mix until thoroughly combined.
- Dip each ladyfinger into espresso for about 1 second and place on the bottom of the serving bowl.
- Pour the mascarpone mixture over the ladyfingers.
- Arrange another layer of soaked ladyfingers and top with the remaining mascarpone mixture.
- Cover the bowls with plastic wrap and refrigerate for at least 4 hours (or overnight).
- Before serving, sprinkle with cocoa powder and chocolate shavings.
Notes
- For a richer flavor, use freshly brewed espresso.
- If ladyfingers are unavailable, use sponge cake fingers cut to size.
- To prevent soggy ladyfingers, don’t over-soak them in the espresso; a quick dip is sufficient.
