Description

Creamy mascarpone, espresso-soaked ladyfingers, and cocoa powder combine for a delightful dessert. A timeless treat perfect for any occasion.


Ingredients

  • 3 egg yolks
  • 1/2 cup sugar
  • 4 tbs mascarpone cheese
  • 24 lady fingers
  • 2 tbs cocoa powder
  • 1 cups (237 ml) strong espresso
  • 1/2 cup bitter-sweet chocolate shavings

Instructions

  1. Beat the egg yolks and sugar with an electric mixer or whisk until thick and pale (about 5 minutes).
  2. Add mascarpone cheese and beat until smooth.
  3. Add 1 tablespoon of cocoa powder and mix until thoroughly combined.
  4. Dip each ladyfinger into espresso for about 1 second and place on the bottom of the serving bowl.
  5. Pour the mascarpone mixture over the ladyfingers.
  6. Arrange another layer of soaked ladyfingers and top with the remaining mascarpone mixture.
  7. Cover the bowls with plastic wrap and refrigerate for at least 4 hours (or overnight).
  8. Before serving, sprinkle with cocoa powder and chocolate shavings.

Notes

  • For a richer flavor, use freshly brewed espresso.
  • If ladyfingers are unavailable, use sponge cake fingers cut to size.
  • To prevent soggy ladyfingers, don’t over-soak them in the espresso; a quick dip is sufficient.
