- 1 mango (diced)
- 1 cup (237ml) diced watermelon
- 1 avocado (peeled and diced)
- Juice of 1 lime
- 1/2 small Serrano pepper (finely chopped)
- 2 tablespoons (30ml) fresh mint (chopped)
- 4 6-ounce (170g) salmon fillets
- 1 1/2 teaspoons (7.4ml) salmon rub
- 1 large cedar plank (soaked)
Instructions
- Preheat the grill to medium-low heat, about 350°F (177°C). In a medium bowl, combine mango, watermelon, lime juice, Serrano pepper, and fresh mint; set aside or refrigerate.
- Sprinkle salmon with the salmon rub and season lightly with salt and freshly ground black pepper. Place the soaked cedar plank on the grill, close the lid, and heat for 3 minutes. Using tongs, flip the plank and place the salmon on the hot side of the plank.
- Close the lid and cook for 10-15 minutes until done to your liking, depending on the thickness of the fish. Remove the plank and salmon from the grill. Serve immediately with the fruit salsa.
