Description

Smoky salmon, perfectly cooked on a cedar plank, is topped with a vibrant and refreshing salsa of mango, watermelon, and avocado. The ultimate summer grilling recipe.


Ingredients

  • 1 mango (diced)
  • 1 cup (237ml) diced watermelon
  • 1 avocado (peeled and diced)
  • Juice of 1 lime
  • 1/2 small Serrano pepper (finely chopped)
  • 2 tablespoons (30ml) fresh mint (chopped)
  • 4 6-ounce (170g) salmon fillets
  • 1 1/2 teaspoons (7.4ml) salmon rub
  • 1 large cedar plank (soaked)

Instructions

  1. Preheat the grill to medium-low heat, about 350°F (177°C). In a medium bowl, combine mango, watermelon, lime juice, Serrano pepper, and fresh mint; set aside or refrigerate.
  2. Sprinkle salmon with the salmon rub and season lightly with salt and freshly ground black pepper. Place the soaked cedar plank on the grill, close the lid, and heat for 3 minutes. Using tongs, flip the plank and place the salmon on the hot side of the plank.
  3. Close the lid and cook for 10-15 minutes until done to your liking, depending on the thickness of the fish. Remove the plank and salmon from the grill. Serve immediately with the fruit salsa.
