Description

This Terrifically Tropical Pineapple Salsa combines sweet pineapple with a spicy kick from jalapenos, making it a refreshing and colorful addition to any summer gathering.


Ingredients

  • 2.5 cups diced fresh pineapple
  • 1 jalapeno pepper, stemmed, seeded, and finely diced
  • 1 clove garlic, minced
  • 1 red pepper, diced
  • 1/2 cup cilantro, chopped
  • 1 small red onion, diced
  • Juice of 2 limes
  • Salt, to taste

Instructions

  1. In a large bowl, combine the diced pineapple, jalapeno, garlic, red pepper, cilantro, and red onion.
  2. Add the lime juice and salt to taste, then mix until all ingredients are well combined.
  3. Chill the salsa in the refrigerator for 1-2 hours to allow the flavors to meld.

Notes

For a milder salsa, remove the seeds from the jalapeno. This salsa is best served chilled and can be stored in the refrigerator for up to 3 days. It’s a versatile topping for grilled chicken or fish, and pairs well with tortilla chips.
