- 2 tbsp granulated sugar
- 3/4 cup milk
- 1 cups (237 ml) mashed sweet potatoes
- 3 tbsp unsalted butter
- 1/4 tsp kosher salt
- 1 whole egg
- 4 cups (946 ml) all-purpose flour
Instructions
- Combine yeast, sugar, and milk in a medium mixing bowl; stir until dissolved. Cover and set aside in a warm place for 10 minutes, until foamy.
- Add sweet potatoes, butter, salt, egg, and 3 cups of flour to the milk mixture; mix with a wooden spoon until well combined.
- Turn dough out onto a floured board and knead in about 1 cup of flour to make a soft dough. Knead for 5 minutes, until smooth and elastic.
- Place dough in a buttered bowl, cover, and let rise in a warm place until doubled in bulk, about 1 1/2 hours.
- Deflate dough, form into 12 balls, place in a buttered 9×9 inch baking pan, cover, and let rise until doubled in bulk, about 45 minutes.
- Bake in a preheated oven at 375°F (190°C) for 22 minutes, or until golden brown.
- Serve warm with butter.
Notes
- For richer flavor, use brown sugar instead of granulated sugar.
- To prevent sticking, lightly grease your hands with butter or oil before shaping the rolls.
- These rolls freeze well! Wrap tightly in plastic wrap and then foil, and freeze for up to 3 months.
