Description

This classic English Summer Pudding is a delightful no-bake dessert made with fresh berries and brioche, perfect for showcasing the flavors of summer.


Ingredients

  • 8 cups assorted berries (blueberries, strawberries, raspberries, blackberries, divided)
  • 1 cup water
  • 3/4 cup sugar
  • 1 tablespoon vanilla extract
  • 1 18-ounce brioche loaf
  • Whipped cream, for serving

Instructions

  1. In a large saucepan, combine 6 cups of the assorted berries with 1 cup of water and 3/4 cup of sugar. Cook over medium heat, stirring gently, until the berries start to soften and the sugar dissolves, about 15 minutes.
  2. Remove the saucepan from the heat and stir in 1 tablespoon of vanilla extract. Allow the mixture to cool slightly.
  3. Slice the brioche loaf into 1/2-inch thick slices. Line a 1.5-quart pudding basin or a deep bowl with plastic wrap, leaving an overhang on all sides.
  4. Arrange a layer of brioche slices in the bottom of the basin, cutting pieces to fit as needed. Spoon a portion of the berry mixture over the bread, ensuring it is well soaked.
  5. Continue layering the brioche and berry mixture, pressing down gently, until all the berry mixture is used. Reserve a few slices of brioche for the top layer.
  6. Cover the top with the reserved brioche slices and fold over the plastic wrap to cover the pudding completely.
  7. Place a small plate on top of the pudding and weigh it down with a can or similar heavy object. Refrigerate for at least 8 hours or overnight.
  8. To serve, unwrap the plastic wrap and invert the pudding onto a serving plate. Remove the basin and plastic wrap. Garnish with the remaining 2 cups of fresh berries and serve with whipped cream.

Notes

Use the freshest berries available for the best flavor. The pudding can be made a day in advance and stored in the refrigerator. For a twist, try adding a splash of liqueur to the berry mixture. Serve with a dollop of whipped cream or a scoop of ice cream for extra indulgence.
