Description

These Strawberry Jam Crumble Bars feature a sweet shortbread base topped with a layer of strawberry jam and a delicious cinnamon crumble, perfect for picnics and potlucks.


Ingredients

  • 1 cup unsalted butter, cold and cubed
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 cup strawberry jam, seedless
  • 1/2 cup sliced almonds
  • 1/2 cup brown sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine flour, granulated sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs.
  3. Press the shortbread dough into the bottom of a prepared 13×9 inch pan. Refrigerate for 15 minutes.
  4. Bake the crust for 15 minutes, then remove from the oven.
  5. Spread a layer of strawberry jam over the baked shortbread.
  6. For the crumble, whisk together brown sugar, cinnamon, and flour. Cut in the butter until crumbly.
  7. Add sliced almonds to the crumble mixture and toss to coat.
  8. Sprinkle the crumble over the strawberry layer.
  9. Bake for 25-30 minutes until the top is golden brown.
  10. Allow to cool completely before slicing into bars.
