Description

Sweet and savory breakfast sandwich with strawberry-glazed bacon, brie, and arugula. A decadent treat for any morning.


Ingredients

  • 8 slices (8 slices) Bacon
  • 1 tsp Black Pepper
  • 2 tsp Brown Sugar
  • 1 Tbsp Balsamic Vinegar
  • 4 Tbsp Strawberry Preserves
  • 2 Sandwich Rolls
  • 1 oz (28 g) Brie
  • 1 oz (28 g) Arugula
  • 2 tsp Olive Oil
  • 1 Tbsp Cooking Oil
  • 2 Eggs

Instructions

  1. Preheat oven to 400°F (204°C).
  2. Make glaze by whisking together black pepper, brown sugar, balsamic vinegar, and preserves.
  3. Line a baking sheet with foil. Top with an oven-safe cooling rack, spread bacon on the rack, and bake until nearly crisp (20-25 minutes).
  4. Remove bacon from oven, brush with glaze, and bake until crisp and caramelized (5-7 minutes more).
  5. Slice sandwich rolls in half and place them cut-side up on a baking sheet. Spread one side of each roll with brie and toast in the oven until melted and golden brown.
  6. Toss arugula with olive oil, salt, and black pepper.
  7. Heat cooking oil in a skillet, crack eggs into the hot oil, and fry until cooked through.
  8. Assemble sandwiches: top the melted brie side of the roll with bacon, arugula, and a fried egg.

Notes

  • For easier handling, partially cook the bacon before glazing and crisping in the oven.
  • If brie is unavailable, substitute a mild creamy cheese like Camembert or goat cheese.
  • To prevent soggy sandwiches, assemble just before serving. Store leftover bacon and eggs separately.
