- 2 cups (473 ml) frozen strawberries
- 4-5 tbsp sugar
- 3 tbsp lemon juice
- Pinch of salt
- 1 cups (237 ml) vegan chocolate chips
- 1 1/2 tbsp coconut oil
- 1 cups (237 ml) chopped, shelled pistachios
Instructions
- Combine cream cheese, frozen strawberries, sugar, and lemon juice in a food processor. Pulse until smooth.
- Pour mixture into a popsicle mold and freeze until set (3-4 hours).
- Melt the chocolate chips (at 20-second intervals in the microwave, stirring often).
- Add coconut oil and mix well.
- Line a tray with wax or parchment paper.
- Dip each popsicle in chocolate halfway and sprinkle with chopped pistachios.
- Carefully place popsicles on the lined tray and freeze until ready to serve.
Notes
- For a richer flavor, use high-quality vegan cream cheese alternative.
- If your mixture is too thick, add a tablespoon of plant-based milk at a time until desired consistency is reached.
- Store the chocolate-dipped popsicles in an airtight container in the freezer for up to 2 weeks.
