Description

Dairy-free strawberry cream cheese popsicles, dipped in dark chocolate and pistachios. A simple, refreshing summer treat.


Ingredients

  • 16 oz (454 g) GOVeggie! Dairy Free Strawberry Cream Cheese Alternative
  • 2 cups (473 ml) frozen strawberries
  • 4-5 tbsp sugar
  • 3 tbsp lemon juice
  • Pinch of salt
  • 1 cups (237 ml) vegan chocolate chips
  • 1 1/2 tbsp coconut oil
  • 1 cups (237 ml) chopped, shelled pistachios

Instructions

  1. Combine cream cheese, frozen strawberries, sugar, and lemon juice in a food processor. Pulse until smooth.
  2. Pour mixture into a popsicle mold and freeze until set (3-4 hours).
  3. Melt the chocolate chips (at 20-second intervals in the microwave, stirring often).
  4. Add coconut oil and mix well.
  5. Line a tray with wax or parchment paper.
  6. Dip each popsicle in chocolate halfway and sprinkle with chopped pistachios.
  7. Carefully place popsicles on the lined tray and freeze until ready to serve.

Notes

  • For a richer flavor, use high-quality vegan cream cheese alternative.
  • If your mixture is too thick, add a tablespoon of plant-based milk at a time until desired consistency is reached.
  • Store the chocolate-dipped popsicles in an airtight container in the freezer for up to 2 weeks.
