Description

Crispy tortillas topped with cumin-spiced potatoes, a fried egg, and creamy avocado. A quick and satisfying weeknight meal.


Ingredients

  • 1 russet potato (237 ml) russet potato
  • 2 cloves garlic
  • 2 teaspoons olive oil
  • 1 teaspoon cumin
  • 0.5 teaspoon chile powder
  • salt and pepper
  • 1.5 teaspoons olive oil
  • 0.5 yellow onion
  • 1 tablespoon olive oil
  • 4 eggs
  • 4 flour tortillas
  • sour cream
  • 1 avocado

Instructions

  1. Preheat oven to 425°F (218°C) and grease a baking sheet with nonstick spray.
  2. Combine potatoes, garlic, olive oil, cumin, chile powder, salt, and pepper in a large bowl and toss to evenly combine. Spread onto the prepared baking sheet in a single, even layer. Roast for approximately 25 minutes, until potatoes are golden-brown and fork-tender.
  3. During the last 10-15 minutes of roasting potatoes, warm a small skillet with 1 1/2 teaspoons olive oil over medium heat. Add onions, season with salt and pepper to taste, and sauté until translucent, about 5 minutes. Turn off heat.
  4. Warm a large skillet with 1 tablespoon olive oil over medium-low heat. Crack eggs into the pan, season with salt and pepper, and cook 4-6 minutes, or until whites are set and yolks are cooked as desired.
  5. Toast tortillas in a skillet set over medium to medium-low heat for 1 1/2 – 2 minutes per side, or until golden-brown and crisp.
  6. Spread a thin layer of sour cream over each tortilla. Top with potatoes, onion, fried egg, and avocado slices. Serve immediately.

Notes

  • For extra crispy potatoes, cut them into small, even-sized pieces and ensure they’re in a single layer on the baking sheet.
  • If you don’t have sour cream, substitute Greek yogurt or a dollop of crema fresca for a similar creamy texture.
  • To assemble ahead, prepare the potatoes, onions, and eggs separately and store them in airtight containers in the refrigerator. Toast tortillas and assemble just before serving.
