Description

Creamy goat cheese and crispy turkey bacon bring a unique twist to classic carbonara, served over sweet potato fettuccine.


Ingredients

Units Scale
  • 4 oz (113 g) Sweet Potato Fettuccine
  • 0.5 tbsp Olive oil
  • 4 Strips of Turkey Bacon
  • 1 Large egg
  • 2 oz (57 g) Goat Cheese
  • Salt/pepper
  • Chopped fresh parsley

Instructions

  1. Bring a large pot of salted water to a boil and cook the pasta according to package directions.
  2. While the pasta cooks, heat olive oil in a large pan on medium-high heat.
  3. Cook the bacon until golden brown and crispy, about 1-3 minutes per side.
  4. Transfer the cooked bacon to a paper towel to blot off excess oil, then cut it into small chunks.
  5. Place the bacon back into the pan (heat off) and set aside.
  6. In a medium bowl, whisk together the egg and goat cheese until smooth and creamy.
  7. Once the noodles are done, drain and transfer them back into the pot.
  8. Stir in the bacon pieces and any residual oil. Toss to disperse the bacon and coat the noodles.
  9. Quickly pour the cheese/egg mixture into the pot and stir until slightly thickened and evenly coating the noodles.
  10. Divide between two plates and season with salt, pepper, and parsley.

Notes

  • For extra creamy carbonara, use a combination of goat cheese and Parmesan cheese.
  • If sweet potato fettuccine is unavailable, substitute regular fettuccine or another pasta shape.
  • To prevent the eggs from scrambling, ensure the pasta is hot and the cheese/egg mixture is added off the heat, stirring constantly.
