Ingredients

  • 16 ounces (454 g) cream cheese
  • 1 cups (237 ml) mayonnaise
  • 1 cups (237 ml) sour cream
  • 16 ounces (454 g) smoked gouda
  • 1 lbs (454 g) bacon
  • 3 scallions
  • Freshly ground black pepper

Instructions

Preparation

  1. Shred the smoked gouda.
  2. Cook the bacon until crispy, then chop it. If baking, use an oven at 400°F (204°C) for 10 to 20 minutes.
  3. Chop the scallions.

Cooking Process

  1. Preheat your oven to 400°F (204°C).
  2. Place the cream cheese in a large bowl and microwave for approximately 30 seconds, or until softened.
  3. Add mayonnaise and sour cream to the softened cream cheese and whisk until smooth and creamy.
  4. Set aside 1/3 cup shredded smoked gouda, ¼ cup chopped bacon, and 2 tablespoons chopped scallions for garnish.
  5. Add the remaining cheese, bacon, scallions, and freshly ground black pepper to the creamy base and stir well.
  6. Pour the dip mixture into an oven-proof dish.
  7. Sprinkle the reserved cheese and bacon on top.
  8. Bake in the preheated oven for approximately 30 minutes, or until golden brown and bubbly.
  9. Garnish with the remaining chopped scallions.
  10. Serve immediately.

Notes

  • For a smoother dip, briefly microwave the cream cheese until softened before mixing.
  • Substitute sharp cheddar cheese for a portion of the smoked gouda for a milder flavor.
  • Store leftover dip in an airtight container in the refrigerator for up to 3 days. Reheat gently before serving.
