- 16 ounces (454 g) cream cheese
- 1 cups (237 ml) mayonnaise
- 1 cups (237 ml) sour cream
- 16 ounces (454 g) smoked gouda
- 1 lbs (454 g) bacon
- 3 scallions
- Freshly ground black pepper

Preparation
- Shred the smoked gouda.
- Cook the bacon until crispy, then chop it. If baking, use an oven at 400°F (204°C) for 10 to 20 minutes.
- Chop the scallions.
Cooking Process
- Preheat your oven to 400°F (204°C).
- Place the cream cheese in a large bowl and microwave for approximately 30 seconds, or until softened.
- Add mayonnaise and sour cream to the softened cream cheese and whisk until smooth and creamy.
- Set aside 1/3 cup shredded smoked gouda, ¼ cup chopped bacon, and 2 tablespoons chopped scallions for garnish.
- Add the remaining cheese, bacon, scallions, and freshly ground black pepper to the creamy base and stir well.
- Pour the dip mixture into an oven-proof dish.
- Sprinkle the reserved cheese and bacon on top.
- Bake in the preheated oven for approximately 30 minutes, or until golden brown and bubbly.
- Garnish with the remaining chopped scallions.
- Serve immediately.
Notes
- For a smoother dip, briefly microwave the cream cheese until softened before mixing.
- Substitute sharp cheddar cheese for a portion of the smoked gouda for a milder flavor.
- Store leftover dip in an airtight container in the refrigerator for up to 3 days. Reheat gently before serving.
