Description

Lean pork, mushrooms, and creamy sour cream combine in this easy slow cooker recipe. Perfect for a weeknight meal!


Ingredients

  • 3 lbs (1361 g) pork boneless stew meat
  • 6 tbsp (89 ml) all-purpose flour
  • 2 tsp salt
  • 1 tsp ground black pepper
  • 0.5 tsp sweet paprika
  • 2 tbsp (30 ml) oil
  • 0.5 large white or yellow onion
  • 2 large garlic cloves
  • 2 cups (473 ml) chicken or vegetable broth
  • 0.25 cups (59 ml) dry white wine
  • 1 tbsp (15 ml) tomato paste
  • 8 oz (227 g) sliced white mushrooms
  • 0.5 cups (118 ml) light sour cream or Greek yogurt

Instructions

  1. Place pork meat in a large bowl.
  2. Mix ¼ cup of flour with 1 teaspoon of salt, pepper, and paprika. Dust the mixture over the pork meat and mix well until the pork pieces are covered.
  3. Heat oil over medium-high heat in a large non-stick skillet. Add the pork meat and brown for 5-7 minutes, stirring occasionally.
  4. Transfer the pork meat to a slow cooker and add the onion and garlic.
  5. Dissolve the remaining 2 tablespoons of flour in the broth until smooth. Add the broth/flour mixture to the slow cooker and stir in the wine, tomato paste, and remaining 1 teaspoon of salt.
  6. Add the mushrooms. Cook on high for 4 hours.
  7. Stir in the sour cream. Adjust seasonings as needed.
  8. Optionally, cook for an additional 20 minutes.
  9. Serve over egg noodles or white rice, with shoestring potatoes or hard crusty bread.

Notes

  • For a richer flavor, sear the pork in batches to ensure even browning.
  • If you don’t have white wine, substitute with an equal amount of chicken broth.
  • To thicken the sauce further, stir in 1-2 tablespoons of cornstarch mixed with cold water during the last 30 minutes of cooking.
