- 3 lbs (1361 g) pork boneless stew meat
- 6 tbsp (89 ml) all-purpose flour
- 2 tsp salt
- 1 tsp ground black pepper
- 0.5 tsp sweet paprika
- 2 tbsp (30 ml) oil
- 0.5 large white or yellow onion
- 2 large garlic cloves
- 2 cups (473 ml) chicken or vegetable broth
- 0.25 cups (59 ml) dry white wine
- 1 tbsp (15 ml) tomato paste
- 8 oz (227 g) sliced white mushrooms
- 0.5 cups (118 ml) light sour cream or Greek yogurt
Instructions
- Place pork meat in a large bowl.
- Mix ¼ cup of flour with 1 teaspoon of salt, pepper, and paprika. Dust the mixture over the pork meat and mix well until the pork pieces are covered.
- Heat oil over medium-high heat in a large non-stick skillet. Add the pork meat and brown for 5-7 minutes, stirring occasionally.
- Transfer the pork meat to a slow cooker and add the onion and garlic.
- Dissolve the remaining 2 tablespoons of flour in the broth until smooth. Add the broth/flour mixture to the slow cooker and stir in the wine, tomato paste, and remaining 1 teaspoon of salt.
- Add the mushrooms. Cook on high for 4 hours.
- Stir in the sour cream. Adjust seasonings as needed.
- Optionally, cook for an additional 20 minutes.
- Serve over egg noodles or white rice, with shoestring potatoes or hard crusty bread.
Notes
- For a richer flavor, sear the pork in batches to ensure even browning.
- If you don’t have white wine, substitute with an equal amount of chicken broth.
- To thicken the sauce further, stir in 1-2 tablespoons of cornstarch mixed with cold water during the last 30 minutes of cooking.
