Description

Thin chicken cutlets seared golden in a skillet, then bathed in a creamy sauce loaded with sun-dried tomatoes, garlic, and fresh spinach. The whole thing comes together in about twenty minutes and tastes like something from a neighborhood Italian restaurant. It is the weeknight dinner you make when you want to feel like you are eating out without leaving the house.


Ingredients

  • 4 boneless, skinless chicken breasts, pounded to 1/2-inch thickness
  • 1/2 cup sun-dried tomatoes (oil-packed), drained and roughly chopped
  • 3 cups fresh baby spinach
  • 4 cloves garlic, minced
  • 3/4 cup chicken broth
  • 1/2 cup heavy cream
  • 1/3 cup grated Parmesan
  • 1 teaspoon Italian seasoning
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter

Instructions

  1. Season the chicken breasts with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the chicken 4 to 5 minutes per side until golden and cooked through. Remove to a plate and tent with foil.
  3. Reduce heat to medium. Add butter, garlic, and sun-dried tomatoes to the skillet. Cook 1 minute until the garlic is fragrant.
  4. Pour in the chicken broth and scrape up any browned bits from the bottom. Simmer 2 minutes until slightly reduced.
  5. Stir in the heavy cream and Parmesan. Cook 2 minutes until the sauce thickens slightly. Add the spinach and stir until wilted, about 1 minute.
  6. Return the chicken to the skillet and spoon the sauce over the top. Serve immediately.

Notes

  • Pounding the chicken to an even thickness is what makes the difference between a properly seared cutlet and one that is burnt outside and raw inside.
  • The oil from sun-dried tomatoes is liquid gold — use a tablespoon of it in place of the olive oil for extra flavor.
  • This pairs perfectly with pasta, but it is also great with crusty bread to soak up every last drop of that sauce.
