Description

A quick and satisfying one-pan meal where tender chicken breasts are simmered in a garlicky tomato sauce and topped with bubbly, broiled mozzarella.


Ingredients

Units Scale
  • 1/2 tablespoon (7.4ml) olive oil
  • 4 thinly sliced chicken breast (Equal to 1 pound / 454g)
  • 1/4 teaspoon (1.2ml) pepper
  • 1/4 teaspoon (1.2ml) salt
  • 3 garlic cloves (sliced)
  • 1 cup (237ml) crushed tomatoes
  • 1/2 teaspoon (2.5ml) dried oregano
  • 1/4 teaspoon (1.2ml) crushed red pepper flakes
  • 16 slices mini mozzarella
  • 1 tablespoon (15ml) Parmesan cheese

Instructions

  1. Add olive oil to an oven safe skillet. Season chicken with salt and pepper. Sauté chicken until fully cooked, flipping halfway. This takes about 8 minutes.
  2. Add in sliced garlic and sauté for a minute.
  3. Stir in crushed tomatoes, oregano, and red pepper flakes. Bring to a simmer. This takes about 1-2 minutes.
  4. Take off the heat and top with mozzarella and Parmesan cheese.
  5. Place under the broiler for 1-2 minutes or until cheese is melted. Serve immediately!
