Description

Sweet and savory waffles with Manchego cheese and smoked ham.

Ingredients

  • 1 cups (237 ml) yellow cornmeal
  • 1 cups (237 ml) all purpose flour
  • 2 teaspoons double acting baking powder
  • 0.5 teaspoons baking soda
  • 0.25 teaspoons salt
  • 2 cups (473 ml) buttermilk
  • 2 eggs
  • 0.25 cups (60 ml) maple syrup
  • 4 tablespoons butter
  • 1 cups (237 ml) manchego cheese
  • 1 cups (237 ml) smoked ham

Instructions

  1. Combine flour, cornmeal, baking powder, baking soda, and salt in a large bowl. Whisk together and set aside.
  2. In a smaller bowl, add buttermilk, eggs, and maple syrup. Whisk thoroughly to combine.
  3. Add wet ingredients to dry ingredients and stir until just mixed.
  4. Stir in melted butter.
  5. Add ham and cheese, stirring to combine.
  6. Preheat the waffle iron. Lightly coat with vegetable spray if necessary.
  7. Scoop batter onto the center of the waffle iron. Close the lid and bake until browned and crisp.
  8. Serve waffles immediately or place them in a single layer on a rack in a 200°F (93°C) oven while you continue to make the rest of the waffles.
  9. Serve with butter and maple syrup.

Notes

  • For a richer flavor, use freshly grated Manchego cheese.
  • Leftover waffles can be stored in an airtight container at room temperature for up to 2 days, or frozen for up to 1 month.
  • If you don’t have buttermilk, you can substitute 2 cups of milk with 2 tablespoons of lemon juice or white vinegar.
