Description
Leftover roasted chicken makes a great Chicken salad. And turn it a bit French by dressing it with a tarragon flavored lemony vinaigrette.
Ingredients

- 2 cups shredded chicken
- 2 spring onions, sliced thinly
- 1 stalk celery, cut into small dice
- 2 T chopped parsley
- 2 T chopped celery leaves
- 1 T chopped tarragon
- 4 T olive oil
- 2 T lemon juice
- 2 T red or white wine vinegar
- 2 teaspoons mustard
- Salt and pepper, to taste
Instructions
- Toss thoroughly but gently, then taste and adjust seasonings.
- Can easily be scaled up.
