Description
Grilled Chicken served atop a mushroom tomato sauce, perfect for a quick weeknight dinner or a fancy meal for company.
Ingredients
Units
- 3 lbs skinless, boneless chicken breasts
- 1/4 cup olive oil + 2 tbsp
- Salt and pepper to taste
- 2 cups mushrooms, sliced
- 1 cup cherry tomatoes, halved
- 2 cloves garlic, minced
- 1 tbsp fresh rosemary, chopped
- 1/2 cup chicken broth
Instructions
- Preheat the grill to medium-high heat.
- Brush the chicken breasts with 1/4 cup olive oil and season with salt and pepper.
- Grill the chicken for about 6-7 minutes on each side, until cooked through.
- In a skillet, heat 2 tbsp olive oil over medium heat.
- Add mushrooms and cook until browned, about 5 minutes.
- Add cherry tomatoes, garlic, and rosemary, cooking for another 3 minutes.
- Pour in chicken broth and simmer until slightly reduced.
- Serve the grilled chicken topped with the mushroom sauce.
