Description

This Rocky Road Pie is a decadent dessert featuring a rich chocolate filling topped with toasted marshmallows and crunchy walnuts, all nestled in a flaky pie crust.


Ingredients

  • 4.5 ounces 72% chocolate
  • 6 tablespoons (85g) butter
  • 2 eggs
  • 3/4 cup (150g) sugar
  • 1/4 cup (40g) flour
  • 3 tablespoons (25g) cocoa powder
  • 1/2 teaspoon (2g) salt
  • 1/2 cup (110g) heavy cream
  • Handful of walnuts
  • Handful of marshmallows
  • 1 pre-made pie crust

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Melt the chocolate and butter together in a saucepan over low heat, stirring frequently until smooth.
  3. In a separate bowl, combine eggs and sugar, and beat with an electric mixer until fluffy and pale yellow, about 3 minutes.
  4. Slowly add the melted chocolate mixture to the egg mixture, stirring continuously to combine.
  5. Sift in the flour, cocoa powder, and salt, and gently fold into the mixture until just combined.
  6. Pour the mixture into the pre-made pie crust.
  7. Bake in the preheated oven for 20-25 minutes, or until the filling is set and the top is slightly cracked.
  8. Remove from oven and let cool slightly.
  9. In a separate saucepan, heat the heavy cream over medium heat until it just begins to simmer.
  10. Pour the hot cream over the pie, and top with a handful of walnuts and marshmallows.
  11. Place under a broiler for 1-2 minutes, or until the marshmallows are golden brown and slightly melted.
  12. Allow to cool before serving.

Notes

For a more intense chocolate flavor, use a higher percentage chocolate. Store leftovers in an airtight container at room temperature for up to 3 days. To make it nut-free, omit the walnuts or replace them with a nut-free alternative.
