Dreamy, roasted tomatoes are served over a bed of soft burrata cheese as an easy appetizer with crackers or a simple side dish for summer.
Ingredients

- 2 pints cherry tomatoes
- 1 tbsp olive oil
- 1/4 tsp salt
- pinch pepper
- 1 bunch basil (torn)
- 8 oz burrata cheese (room temp.)
Instructions
- Preheat the oven to 425 degrees. Toss the tomatoes on a sheet pan with olive oil, salt and pepper and roast for 30-35 minutes.
- Toss with some fresh torn basil and serve over burrata cheese with crackers as a dip or as a side dish with a meal.
