Description

A simple pasta from the Amatrice town of Italy, Amatrician is a recipe that should be learned and enjoyed.


Ingredients

Units Scale
  • 1 chopped onion
  • 4 tbsp extra virgin olive oil
  • 300 g 11 oz tomato pulp (from cherry or San Marzano tomatoes)
  • Pinch of sea salt
  • 150 g 5 oz seitan, cut into cubes
  • 160 g 3 oz maccheroni or bucatini pasta (I choose whole wheat mezzi maccheroni pasta)
  • 2 tbsp grated Pecorino romano

Instructions

  1. Brown the onion in extra virgin olive oil (2 tbsp). Remove it and cook the tomato pulp until the sauce is smooth (about 15 minutes).
  2. In a non stick pan cook the seitan for five minutes. Add it to tomato sauce and stir over low heat for 3-5 minutes. When the tomato is cooked, add 1 tbsp extra virgin olive oil and salt.
  3. Cook the pasta, al dente, in boiling salted water.
  4. Drain and season with the sauce. Add the grated pecorino.
