Scale
- 2 Tbsp Olive Oil
- 2 medium Yellow Onions, thinly sliced
- 2 Tbsp Butter
- 1/4 cup Red Wine
- 1 medium Butternut Squash, cubed
- 4 leaves Fresh Sage, chopped
- 1 Baguette, sliced
- 1 cup Ricotta Cheese
- Honey, for drizzling
- Salt and Pepper, to taste
Instructions
- Preheat oven to 400 degrees F (200 degrees C).
- Place cubed butternut squash on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast in the oven for 25-30 minutes, or until tender and slightly caramelized.
- While the squash is roasting, heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the sliced onions and sauté until they begin to soften, about 5 minutes.
- Reduce the heat to low-medium, add butter, and continue to cook the onions, stirring occasionally, until they are deeply caramelized, about 20-25 minutes.
- Pour in the red wine and cook for an additional 5 minutes, or until the wine has reduced and the onions are richly colored and flavorful.
- Remove the onions from heat and set aside.
- About 10 minutes before the squash is done, slice the baguette and brush each slice with olive oil. Place on a baking sheet and toast in the oven for 8-10 minutes, or until golden brown.
- To assemble the crostini, spread a generous amount of ricotta cheese on each toasted baguette slice.
- Top with a spoonful of the red wine caramelized onions and a few pieces of roasted butternut squash.
- Drizzle with honey and garnish with chopped fresh sage.
- Serve immediately, paired with a glass of red wine.
Notes
You can make the roasted squash and caramelized onions up to a week in advance and store them in the fridge. Assemble the crostini just before serving. Pair with a bold red wine for the best flavor experience. This recipe is versatile enough for a casual lunch or a festive holiday gathering.
