Scale
- 2 lb (1 kg) red onion, thinly sliced
- 3 3/4 cups (750 g) sugar
- 1/3 cup (50 g) raisins
- 1 jalapeno pepper, finely chopped
- 2 bay leaves
- 5 whole cloves
- 1 cup (250 ml) white wine
- 1 cup (250 ml) vinegar
Instructions
- Thinly slice the red onions and combine them with the sugar in a large bowl. Cover the mixture and let it stand for one hour to allow the onions to release their juices.
- Add the raisins, jalapeno pepper, bay leaves, cloves, white wine, and vinegar to the bowl with the onion mixture.
- Transfer the mixture to a large pot and bring it to a boil over medium-high heat.
- Once boiling, reduce the heat to low and simmer for 1 hour, stirring occasionally, until the mixture thickens and the onions are soft.
- Remove from heat and let the relish cool slightly before transferring it to sterilized jars for storage.
Notes
- This relish pairs wonderfully with goat cheese and can be served on bruschetta.
- It keeps well in the fridge for a few weeks.
