Description

This tangy and sweet red onion relish is perfect for adding a burst of flavor to burgers, grilled meats, or as a topping for toasts and crackers.


Ingredients

  • 34 oz (1 kg) red onion, thinly sliced
  • 25 oz (750 g) sugar
  • 1.6 oz (50 g) raisins
  • 1 jalapeno pepper, finely chopped
  • 2 bay leaves
  • 5 whole cloves
  • 1 cup (250 ml) white wine
  • 1 cup (250 ml) vinegar

Instructions

  1. Thinly slice the red onions and combine them with the sugar in a large bowl. Cover the mixture and let it stand for one hour to allow the onions to release their juices.
  2. Add the raisins, jalapeno pepper, bay leaves, cloves, white wine, and vinegar to the bowl with the onion mixture.
  3. Transfer the mixture to a large pot and bring it to a boil over medium-high heat.
  4. Once boiling, reduce the heat to low and simmer for 1 hour, stirring occasionally, until the mixture thickens and the onions are soft.
  5. Remove from heat and let the relish cool slightly before transferring it to sterilized jars for storage.

Notes

This relish pairs wonderfully with goat cheese and can be served on bruschetta. It keeps well in the fridge for a few weeks. Ensure jars are sterilized before storing to extend shelf life.
