Description

Rich, decadent raw brownies made with dates, nuts, and cocoa. Topped with a luscious ganache and crunchy toppings.


Ingredients

  • 1 cups (237 ml) dates
  • 1 1/2 cups (355 ml) raw walnuts
  • 1/2 cup (118 ml) raw almonds
  • 3/4 cup (177 ml) raw cocoa powder
  • 1 tsp vanilla essence or seeds
  • 1/2 tsp sea salt
  • 2 tbs water
  • sea salt

  • crushed walnuts

Instructions

  1. Add all brownie ingredients to a food processor and pulse until a ball forms, scraping down the sides as needed.
  2. Line a 20×20 cm baking dish with parchment paper and firmly press the dough into it.
  3. Refrigerate the dough to chill.
  4. For the ganache:
  5. Melt coconut oil and mix with agave syrup and cocoa powder.
  6. Spread the ganache over the brownies and sprinkle with cocoa nibs, sea salt, and crushed walnuts.
  7. Refrigerate to set.
  8. Cut into small squares and store in the refrigerator for up to one week.

Notes

  • If your dates are very dry, add 1-2 tablespoons extra water to achieve a sticky, workable dough.
  • For a richer ganache, use dark chocolate instead of cocoa powder and coconut oil.
  • To prevent the brownies from sticking, lightly grease the parchment paper before pressing in the dough.
