Description
Rich, decadent raw brownies made with dates, nuts, and cocoa. Topped with a luscious ganache and crunchy toppings.

- 1 cups (237 ml) dates
- 1 1/2 cups (355 ml) raw walnuts
- 1/2 cup (118 ml) raw almonds
- 3/4 cup (177 ml) raw cocoa powder
- 1 tsp vanilla essence or seeds
- 1/2 tsp sea salt
- 2 tbs water

Instructions
- Add all brownie ingredients to a food processor and pulse until a ball forms, scraping down the sides as needed.
- Line a 20×20 cm baking dish with parchment paper and firmly press the dough into it.
- Refrigerate the dough to chill.
- For the ganache:
- Melt coconut oil and mix with agave syrup and cocoa powder.
- Spread the ganache over the brownies and sprinkle with cocoa nibs, sea salt, and crushed walnuts.
- Refrigerate to set.
- Cut into small squares and store in the refrigerator for up to one week.
Notes
- If your dates are very dry, add 1-2 tablespoons extra water to achieve a sticky, workable dough.
- For a richer ganache, use dark chocolate instead of cocoa powder and coconut oil.
- To prevent the brownies from sticking, lightly grease the parchment paper before pressing in the dough.
