Description
A quick weeknight dinner featuring juicy chicken breasts in a rich marinara sauce, topped with melted mozzarella. Ready in under 20 minutes!

- 4 (1134 g) thinly sliced chicken breasts
- 1 tbsp olive oil
- 24 oz (680 g) marinara sauce
- 4 slices or 1 cup (237 ml) shredded mozzarella cheese
- chopped parsley

Instructions
- Heat a large nonstick skillet with olive oil over medium-high heat.
- Sprinkle chicken with salt and pepper on both sides.
- Add chicken to the skillet and cook for 3–5 minutes per side, or until cooked through.
- If serving with pasta, cook pasta according to package directions.
- Preheat the oven broiler.
- Add tomato sauce to the skillet with the chicken; once simmering, lower heat and cover to fully heat the sauce (a few minutes).
- Once the sauce is heated, top each chicken breast with mozzarella cheese.
- Broil for 1–2 minutes, or until the cheese is bubbly and melted.
- Top with chopped parsley or basil.
- Serve immediately with pasta and a salad, if desired.
Notes
- To ensure even cooking, use boneless, skinless chicken breasts of similar thickness.
- For a creamier sauce, stir in a tablespoon of heavy cream or crème fraîche at the end.
- Leftovers can be stored in the refrigerator for up to 3 days and reheated in the microwave or skillet.
