- 4 cups (322g) old-fashioned oats
- 1 cup (80g) All-bran
- 1 cup (125g) wheat germ
- 1/4 cup (40g) flax seeds
- 1/4 cup (30g) roasted pumpkin seeds
- 3/4 cup (90g) chopped pecans
- 1/4 cup (50g) brown sugar
- 1/4 cup maple syrup
- 1/2 cup pumpkin puree (consistency of applesauce)
- 1 teaspoon cinnamon
- 1/2 teaspoon ginger
Instructions
- Preheat your oven to 300 degrees F (150 degrees C).
- In a large mixing bowl, combine the oats, All-bran, wheat germ, flax seeds, pumpkin seeds, and chopped pecans.
- In a separate bowl, mix together the brown sugar, maple syrup, pumpkin puree, cinnamon, and ginger until well combined.
- Pour the wet ingredients over the dry ingredients and toss until everything is evenly coated.
- Spread the granola mixture onto an ungreased baking sheet in an even layer.
- Bake in the preheated oven for 30 minutes, stirring every 5 minutes, until the granola is golden brown and fragrant.
- Allow the granola to cool completely on the baking sheet before transferring it to an airtight container for storage.
Notes
Use pumpkin puree with the consistency of applesauce for best results. Canned pumpkin may not work well due to its water content. Store the granola in an airtight container to keep it fresh. You can substitute some of the pumpkin puree with oil if desired.
