Prosciutto-Wrapped Pears with Manchego and Beaujolais Wine

Description

Sweet pears and salty prosciutto make a sophisticated appetizer. Easy to assemble and perfect for a party.


Ingredients

  • 2 pears (454 g) pears
  • 1 handful arugula
  • 8 slices prosciutto
  • 8 oz (227 g) manchego
  • 2 tbsp balsamic glaze
  • 1 tsp lemon juice

Instructions

  1. Slice pears into thin slices and place in a bowl of lemon water. Let sit for one minute, then remove and pat dry.
  2. Slice the prosciutto pieces lengthwise and lay them out on a cutting board. Slice the manchego into pieces that are not too thick but will not break in half.
  3. Assemble each roll by laying down one piece of prosciutto, placing one pear slice at one end, a few pieces of arugula, and one piece of cheese, then rolling up. Use toothpicks to secure if needed.
  4. Lay the rolls out on a serving platter and drizzle with balsamic glaze.
  5. Serve immediately.

Notes

  • To prevent browning, immediately submerge pear slices in lemon water after slicing.
  • For a richer flavor, use aged Manchego cheese.
  • Store assembled rolls, uncovered, in the refrigerator for up to 2 hours before serving; do not drizzle with balsamic glaze until serving.
