Instructions
- Preheat oven to 350°F (177°C).
- Slice baguette on an angle and arrange slices in a single layer on a rimmed baking sheet.
- Brush baguette slices with olive oil and bake until lightly toasted, about 15 minutes.
- Add 1 tablespoon of olive oil to a skillet and fry whole slices of prosciutto for three to four minutes, until crispy.
- Remove prosciutto and place on a paper towel-lined plate; set aside.
- In the same skillet over medium heat, add 1 tablespoon of olive oil and trimmed asparagus. Season with salt and pepper.
- Cook asparagus for 10 minutes, turning to ensure even cooking.
- Remove toast from oven and let cool slightly.
- Spread goat cheese over the toast.
- Top with 1 teaspoon of fig jam, cooked asparagus, and crispy prosciutto.
Notes
- For extra crispy prosciutto, broil it for the last minute of cooking.
- If goat cheese is too firm, let it sit at room temperature for 30 minutes before spreading.
- Substitute another creamy cheese, like ricotta, for the goat cheese if needed.
