Pork Tacos and Pineapple Salsa

Description

Spicy pork tacos get a sweet and tangy twist with this vibrant pineapple salsa. A quick weeknight meal the whole family will love.


Ingredients

  • 1 cups (237 ml) olive oil
  • 1 tbsp (15 ml) peri peri seasoning
  • 1 lbs (454 g) pork fillet
  • 1 small pineapple
  • 1/4 small red onion
  • 1 small handful freshly chopped coriander
  • 1/2 red long chili
  • 2 tsp apple cider vinegar
  • 1/4 tsp sea salt
  • 1 pinch freshly ground black pepper
  • 1 small avocado
  • 1 lime
  • 8 mini corn tortillas

Instructions

  1. Preheat oven to 356°F (180°C).
  2. Drizzle the pork with olive oil and sprinkle with peri peri spice mix, rubbing it well into the meat. Cut the fillet in half if needed to fit the pan.
  3. Heat a large frying pan over medium-high heat and sear the pork for 5-6 minutes on each side, turning regularly. Allow the meat to rest wrapped in aluminum foil for 5 minutes.
  4. Peel, core, and finely dice the pineapple. Peel and finely slice the onion. Cut the chili in half, remove seeds, and finely dice the flesh. Finely chop the coriander.
  5. Combine the pineapple, onion, chili, and coriander in a bowl. Season with apple cider vinegar, salt, and pepper.
  6. Scoop avocado flesh into a small bowl and drizzle with juice from half a lime. Cut the remaining lime half into wedges and reserve for serving.
  7. Heat tortillas wrapped in aluminum foil in the 356°F (180°C) oven for 10 minutes.
  8. Once the pork has rested, slice it into 5mm-thin slices.
  9. To serve, top each tortilla with a spoonful of avocado, 4-5 slices of pork, and a generous topping of pineapple salsa. Serve with a lime wedge on the side.

Notes

  • For extra tender pork, marinate it in the peri-peri seasoning for at least 30 minutes before cooking.
  • If you don’t have peri-peri seasoning, use a blend of chili powder, smoked paprika, and cayenne pepper to taste.
  • To prevent the tortillas from drying out, warm them only until they are pliable; don’t overcook them.
