Description

Sweet and savory collide in this easy vegetarian sandwich. Perfect for a quick lunch or school snack!


Ingredients

  • 2 slices whole grain bread
  • 2 tbsp strawberry jam
  • 1/3 cups (89 ml) baby spinach
  • 1/2 cups (118 ml) Fuji apple
  • 1 oz (28 g) Chevre D’Argental French goat cheese

Instructions

  1. Spread jam over one side of both slices of bread.
  2. Add spinach and apple slices to one slice of bread. Add goat cheese.
  3. Top with the second slice of bread.
  4. Wrap the sandwich in parchment paper and cut it in half.

Notes

  • For a sweeter sandwich, use a jam with a higher sugar content.
  • To prevent the sandwich from getting soggy, assemble it just before serving.
  • Substitute crumbled feta cheese for goat cheese if desired.
