Description

Grab some of summer’s fresh berries, a touch of sugar, and your favorite yogurt to easily create a festive cool dessert.

Ingredients

Units Scale
  • 1 cup (150g) fresh strawberries, hulled and chopped
  • 1 cup (150g) fresh blueberries
  • 2 tablespoons (25g) raw sugar, divided
  • 1 cup (240g) vanilla Greek yogurt

Instructions

Muddle the Berries

  1. Prepare Strawberries:
    • Place the chopped strawberries in a bowl.
    • Add 1 tablespoon of raw sugar.
    • Muddle the strawberries gently until they release their juices but still have some chunks.
  2. Prepare Blueberries:
    • Place the blueberries in a separate bowl.
    • Add 1 tablespoon of raw sugar.
    • Muddle the blueberries gently until they release their juices but still have some chunks.

Layer the Popsicles

  1. Layer the Popsicle Molds:
    • Spoon a layer of muddled strawberries into the bottom of each popsicle mold.
    • Add a layer of vanilla Greek yogurt on top of the strawberries.
    • Spoon a layer of muddled blueberries on top of the yogurt.
  2. Insert Sticks and Freeze:
    • Insert popsicle sticks into each mold.
    • Freeze for at least 4-6 hours or until completely frozen.

Serve

  1. Remove from Molds:
    • To remove the popsicles from the molds, run the outside of the molds under warm water for a few seconds to loosen them.
    • Gently pull the popsicles out and enjoy.

Notes

  • Adjust Sweetness: You can adjust the amount of sugar based on your taste preferences.
  • Yogurt Choice: Use your favorite type of yogurt. Vanilla Greek yogurt adds a nice flavor, but plain or other flavored yogurts can also be used.
  • Muddling Tips: Don’t over-muddle the berries; keep some chunks for texture.
  • Storage: Store popsicles in an airtight container in the freezer for up to 2 weeks.
