Healthier than fried, bust still deliciously crispy, these Chicken Parmesan Poppers are the perfect finger food for your guests and eaters.


Ingredients

  • 4 boneless, skinless chicken breasts, diced into 1-inch pieces
  • Salt, to taste
  • Pepper, to taste
  • 3/4 cup all-purpose flour
  • 3 eggs, beaten
  • 3/4 cup breadcrumbs or panko
  • 1/3 cup grated Parmesan cheese
  • 1 tablespoon minced parsley
  • Marinara sauce, for dipping

Instructions

1. Preparing for Baking:

  • Preheat the oven to 400°F (200°C).
  • Line a sheet pan with parchment paper and set aside.
  • Arrange the cubed chicken in a single layer on the pan. Season evenly with salt and pepper on both sides.

2. Setting Up the Dipping Station:

  • Prepare three bowls for coating the chicken.
  • In the first bowl, add the flour.
  • In the second bowl, pour in the beaten eggs.
  • In the third bowl, mix together breadcrumbs or panko, grated Parmesan cheese, and minced parsley.

3. Coating the Chicken:

  • Coat each piece of chicken by first dipping it in the flour, shaking off any excess.
  • Then dip it into the egg, allowing excess to drip off.
  • Finally, roll the chicken piece in the breadcrumb mixture until fully coated.
  • Place each coated chicken piece on the parchment-lined baking sheet.

4. Baking:

  • Bake in the preheated oven for 25-30 minutes, or until the exterior is crisp and lightly browned.

5. Preparing the Marinara Sauce:

  • While the chicken is baking, heat the marinara sauce in a saucepan over low heat.

6. Serving:

  • Serve the baked chicken poppers with the warmed marinara sauce for dipping.
