Description

This old-fashioned egg salad is a simple and delicious classic, perfect for sandwiches or as a salad on its own.


Ingredients

  • 6 hard boiled eggs
  • 3-4 tablespoons mayonnaise
  • 1/2 teaspoon salt, adjust to taste
  • Pinch ground black pepper, adjust to taste

Instructions

  1. Remove the shells from the boiled eggs.
  2. Place the eggs in a large bowl. Using either the back of a fork or a potato masher, push down to break up the eggs until you have coarse pieces or your desired texture.
  3. Add 3-4 tablespoons of mayonnaise to the eggs and mix well until combined.
  4. Season with 1/2 teaspoon of salt and a pinch of ground black pepper, adjusting to taste.
  5. Mix everything thoroughly and serve immediately or chill in the refrigerator before serving.

Notes

For best results, use real mayonnaise and avoid adding extra ingredients like celery or peas. Serve on wheat bread for a classic egg salad sandwich. Store any leftovers in an airtight container in the refrigerator for up to 2 days.
