Description

Sweet and nutty, these no-bake bites are packed with protein and fiber. Perfect for a healthy snack or dessert.


Ingredients

  • 1/2 cups (118 ml) unsalted pistachios
  • 1/2 cups (118 ml) certified gluten free old fashioned oats
  • 1 tbsp chia seeds
  • 4 dates soaked in warm water for 5-10 minutes
  • 1/2 cups (118 ml) good quality milk chocolate melted (or dark)
  • 2 pinches salt

Instructions

  1. Place the pistachios and oats in a high-speed blender and pulse until well-ground and flour-like.
  2. Add in the soaked dates, chia seeds, and salt and pulse until the mixture clumps up.
  3. Spoon the pistachio mixture into a bowl.
  4. Melt the milk chocolate (or dark chocolate) in a broiler or microwave (check and stir at 25–30 second intervals). Ensure the melted chocolate isn’t too hot; let it cool if necessary.
  5. Pour the melted chocolate into the pistachio, oat, date, and chia mixture and stir well.
  6. Gather teaspoons of the mixture and roll to form bites/balls.
  7. Chill the chocolate pistachio bites for 30 minutes before enjoying.

Notes

  • Toasted pistachios will enhance the flavor; toast them lightly in a dry pan before blending.
  • For a vegan option, use a plant-based milk chocolate and ensure your oats are certified vegan.
  • Store the bites in an airtight container in the refrigerator for up to a week to maintain freshness and prevent them from becoming soft.
