- 1/2 cups (118 ml) almonds
- 1 cups (237 ml) packed prunes
- 1 Tbsp chia seeds
- 1 Tbsp orange zest
- Pinch of salt
- 1/2 cups (118 ml) shredded coconut
Instructions
- In a food processor, process almonds until coarsely ground.
- Add prunes, chia seeds, orange zest, and salt, and process until the mixture is evenly mixed and forms a ball.
- Form teaspoon-sized pieces of dough into balls and roll in the shredded coconut to coat.
Notes
- If the mixture is too dry to form balls, add 1-2 teaspoons of water or prune juice.
- For a sweeter treat, add 1-2 tablespoons of maple syrup or honey to the mixture.
- Store energy bites in an airtight container in the refrigerator for up to one week.
