Description

These no-bake bites are a quick and healthy snack.
Perfect for breakfast or an on-the-go treat!


Ingredients

  • 1/2 cups (118 ml) almonds
  • 1 cups (237 ml) packed prunes
  • 1 Tbsp chia seeds
  • 1 Tbsp orange zest
  • Pinch of salt
  • 1/2 cups (118 ml) shredded coconut

Instructions

  1. In a food processor, process almonds until coarsely ground.
  2. Add prunes, chia seeds, orange zest, and salt, and process until the mixture is evenly mixed and forms a ball.
  3. Form teaspoon-sized pieces of dough into balls and roll in the shredded coconut to coat.

Notes

  • If the mixture is too dry to form balls, add 1-2 teaspoons of water or prune juice.
  • For a sweeter treat, add 1-2 tablespoons of maple syrup or honey to the mixture.
  • Store energy bites in an airtight container in the refrigerator for up to one week.
