Description

Creamy key lime filling meets a buttery graham cracker crust and a burst of fresh blackberries. Perfect for a summer gathering or a special occasion.


Ingredients

  • 1 3/4 cups (420 ml) graham cracker crumbs
  • 6 tbsp granulated sugar
  • 1/2 tsp cinnamon
  • 7 tbsp butter
  • 8 oz (227 g) package cream cheese
  • 28 oz (794 g) cans sweetened condensed milk
  • 3/4 cups (177 ml) lime juice
  • 1 1/2 tbsp lime zest
  • 1/4 tsp salt
  • Freshly whipped cream
  • Fresh blackberries
  • Lime slices

Instructions

  1. Preheat oven to 350°F (177°C).
  2. Combine graham cracker crumbs, sugar, cinnamon, and melted butter in a medium bowl. Press mixture into the bottom of a 9-inch springform pan and bake for 10 minutes.
  3. Remove from oven and allow to cool.
  4. Make the Filling:
  5. In a stand mixer fitted with the paddle attachment, beat the cream cheese until lightened and creamy. Pour in the sweetened condensed milk and continue beating until smooth. Add the lime juice, lime zest, and salt, and continue mixing until mixture is fully incorporated.
  6. Pour into cooled crust and bake for 15-17 minutes, or until the filling is set.
  7. Allow pie to cool for at least 30 minutes before putting it in the refrigerator for at least 3 hours, before serving.
  8. Make the Topping:
  9. Just before serving, top pie with blackberry topping.
  10. Decorate pie with whipped cream, fresh blackberries and lime slices.

Notes

  • For a richer flavor, use lime juice freshly squeezed from key limes.
  • If you don’t have a springform pan, a 9-inch pie plate will work; adjust baking time as needed.
  • To prevent the crust from getting soggy, ensure the crust is completely cool before adding the filling.
