Description

  • 1 cup (225 g) lightly salted butter, softened

  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2/3 cup cocoa powder

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together the flour, salt, and baking powder. Set aside.
  3. In a large mixing bowl, beat the softened butter and sugar together until light and fluffy, about 1 minute.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and cocoa powder until fully incorporated.
  5. Gradually add the flour mixture to the wet ingredients, mixing until just combined.
  6. Roll the dough out on a lightly floured surface to about 1/4 inch thickness. Cut into desired shapes using cookie cutters.
  7. Place the cookies on a baking sheet lined with parchment paper, leaving some space between each cookie.

  9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
