National Pinot Grigio Day: Berry Brie Chicken Sliders

Description

Sweet brie and triple berry jam top juicy chicken in these mini sliders. A perfect summer pairing with Pinot Grigio.


Ingredients

Units Scale
  • 1 cups (237 ml) chicken breast
  • 1 tsp pepper
  • 1 tsp salt
  • 1/4 wheel brie
  • 4 slices fuji apple
  • 4 tsp any jam
  • 4 slider rolls
  • A handful spinach leaves
  • 2 tbsp unsalted butter

Instructions

  1. Preheat oven to 350°F (177°C).
  2. Cut 1/4 of a brie wheel, remove the wax, and cut it into four pieces. Set aside.
  3. Trim the chicken breast and cut it into four relatively equal-sized pieces.
  4. Generously sprinkle salt and pepper on both sides of the chicken pieces.
  5. Cook the chicken in a frying pan to an internal temperature of 165°F (74°C).
  6. Toast slider rolls in the preheated oven (350°F/177°C) for 4-5 minutes, until browned.
  7. Place one piece of brie cheese on each piece of chicken and let it melt for 1-2 minutes. Remove the chicken and set aside.
  8. Place the brie-topped chicken onto the bottom of a slider roll. Add a couple of pieces of spinach, an apple slice, and one teaspoon of jam per slider.
  9. Add the top of the slider roll.

Notes

  • For easier brie slicing, chill the wheel for 30 minutes before cutting.
  • Substitute apricot or fig jam for a different flavor profile.
  • These sliders are best served immediately, but can be assembled ahead and reheated gently.
