Description
Sweet brie and triple berry jam top juicy chicken in these mini sliders. A perfect summer pairing with Pinot Grigio.

- 1 cups (237 ml) chicken breast
- 1 tsp pepper
- 1 tsp salt
- 1/4 wheel brie
- 4 slices fuji apple
- 4 tsp any jam
- 4 slider rolls
- A handful spinach leaves
- 2 tbsp unsalted butter
Instructions
- Preheat oven to 350°F (177°C).
- Cut 1/4 of a brie wheel, remove the wax, and cut it into four pieces. Set aside.
- Trim the chicken breast and cut it into four relatively equal-sized pieces.
- Generously sprinkle salt and pepper on both sides of the chicken pieces.
- Cook the chicken in a frying pan to an internal temperature of 165°F (74°C).
- Toast slider rolls in the preheated oven (350°F/177°C) for 4-5 minutes, until browned.
- Place one piece of brie cheese on each piece of chicken and let it melt for 1-2 minutes. Remove the chicken and set aside.
- Place the brie-topped chicken onto the bottom of a slider roll. Add a couple of pieces of spinach, an apple slice, and one teaspoon of jam per slider.
- Add the top of the slider roll.
Notes
- For easier brie slicing, chill the wheel for 30 minutes before cutting.
- Substitute apricot or fig jam for a different flavor profile.
- These sliders are best served immediately, but can be assembled ahead and reheated gently.
