Description
Juicy pork chops get a creamy, decadent upgrade with earthy mushrooms and smoky bacon. A quick weeknight meal that feels fancy.

- 4 lbs (1814 g) Farm Promise Boneless 8 ounce Cut Pork Chops
- 2 cups (473 ml) Baby Bella Mushrooms cut in half or quarters
- 2 slices Farm Promise Slow Smoked Applewood Uncured Bacon (cut in little pieces)
- 1/4 cup Quick dissolving flour or all-purpose flour
- 1/2 cup White wine (dry)
- 1 cups (237 ml) Heavy Cream
- 3 cloves Garlic minced
- 1/4 tsp Dried thyme (you can use up to 1 teaspoon)
- 1 tbsp Butter or Ghee to sauté the mushrooms
- 2 tbsp Ghee or Cooking oil to sear the pork chops
- 1 tsp Fresh chopped thyme + few springs
- Salt and Pepper to taste
- 3 tbsp Kosher Salt
- 3 cups (709 ml) Water
Instructions
- Dissolve salt in water, bring to room temperature, add pork chops, and brine for at least 30 minutes. Refrigerate if brining longer. Remove from refrigerator 30 minutes before cooking.
- Cut up bacon and cook in a clean pan over low heat until crispy (about 5 minutes). Set aside.
- Wash, dry, and cut mushrooms. Heat butter or ghee, add mushrooms, and do not disturb for 5 minutes to sear. Mix, add salt and pepper, and cook for another 2-3 minutes. Remove from pan.
- Add more ghee or oil to the pan. Season pork chops with salt and pepper, coat in flour, and add to the hot pan. Sear undisturbed for 4 minutes per side. Remove from pan, cover with foil, and set aside.
- Add garlic and dried thyme to the pan and cook for 1 minute until fragrant. Add wine and deglaze the pan, cooking for 2 minutes until reduced by half.
- Add cream, mix, and cook for 2 minutes. Season with salt and pepper to taste.
- Return pork chops to the pan and cook for 2-3 minutes until the internal temperature reaches 145°F (63°C).
- Top pork chops with mushrooms and bacon and serve.
Notes
- For richer flavor, let the pork chops sit at room temperature for 30 minutes before searing.
- If you don’t have white wine, substitute with an equal amount of chicken broth or dry vermouth.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated gently.
